Foglie d'Autunno with Prosciutto & Herbs
A delcious meal for any occaision.
Directions
- Heat olive oil in a medium skillet over medium-low heat. Add onion and cook 5 minutes, stirring occasionally. Add carrot, cover skillet, and cook 5 minutes or until carrot is tender, stirring occasionally.
- Add prosciutto and cook 3-4 minutes, stirring constantly. Add garlic and cook 2 minutes, stirring constantly. Stir in fresh herbs and parsley. Set aside.
- Cook pasta according to directions on package. Before draining, remove 1 1/2 cups pasta water. Set aside. Drain pasta well.
- Add pasta water to prosciutto mixture in skillet and bring to boil.
- Return drained pasta to pot. Add heated sauce and toss well. Season to taste with salt, pepper and parmesan cheese.

- 1/4 cup extra virgin olive oil
- 1 medium onion, finely chopped
- 1 large carrot, finely diced
- 8 ounces (1/8-inch thick slices) prosciutto, finely diced
- 2 cloves garlic, finely chopped
- Fresh herbs, to taste
- 1 1/2 tablespoons chopped fresh parsley
- 1 package Foglie d'Autunno pasta
- Salt and fresh ground pepper
- Freshly grated Parmesan cheese
